Low-iron or standard float?
Low-iron is worth it beside white
On standard float glass the green cast is there but muted by the colour. Side by side with the same colour on low-iron, the float version is slightly cooler and greener; on its own, most people do not notice. Low-iron is worth the premium when the kitchen is otherwise white or cream, or the splashback meets a white worktop where the shift will show; against timber or dark units, standard float is fine.
How a painted splashback is made
6mm glass, toughened for the heat behind a hob, with the sockets and the hob notch cut before toughening, then painted on the back so the colour sits behind a glass surface that wipes clean. The colour you see is the paint through the glass, which is why the base glass matters and why the surface is always gloss.

Does RAL 7037 Dusty grey need low-iron glass?
Not necessarily. Dusty grey is a mid-tone, so the green cast of standard float is muted; you will see the difference beside the same colour on low-iron, but rarely on its own. Choose low-iron if the splashback sits against a white kitchen.
